That flavor is an essential element to me. My Greek Orthodox friend uses lemon juice instead, so I guess citrus flavors are a common element. So many variants - I must sample more! You'd find the orange blossom water or rose water in some middle eastern varieties. Makes it very Mediterranean. And, ever since I moved here, I've been using pecans instead of my old mix of walnuts and almonds - those three trees that litter my yard most autumns are good for something. :-) When I make baklava, I use a syrup made of one cup sugar, one cup honey, one cup water, and a tablespoon of orange blossom water (Kuchen Laden in Fredericksburg carries it).
