Because if an iTablet goes for $1000-$2000 more than the competition's devices (the way Macs used to be), they're going to have an awful small amount of market share no matter how much superior they might be to competing devices. And more so if Apple, for some reason, decides to differentially-prefer these devices the way they did the iPod Touch versus the iPhone in restricting some content to the iPhone only (or to the AppleTV) and keeping them off the Tablet. 7-8" of screen goodness does nobody any good when iTunes says 'you cannot upload this content to this device', or similar.
